In modern cooking, offal is not often used as the basis of an exquisite recipe. Selection and preparation of ingredients
The purchase of products for the described dish does not cause much difficulty, since they are in almost every supermarket. For cooking, you should use only the highest quality ingredients, so vegetables and mushrooms should be fresh, and not contain traces of pests, putrefactive lesions, and more. Mushrooms are used as a mushroom component, but they can be replaced with any other mushroom.
Important! Sour cream for the dish must necessarily be natural, such a product in the composition contains exclusively cream and bacterial sourdough, while it is stored for no more than 14 days. Other symptoms speak of sour cream with artificial additives and preservatives that are unhealthy.
The main ingredient is selected according to a similar principle, while a quality heart always has:
- dark pink or burgundy color, other shades indicate a spoiled or previously frozen product;
- pleasant sweet smell;
- wet and elastic surface of tissues, sticky and dry integuments indicate spoilage;

Preparation of products is quite simple:
- Vegetables and mushrooms must be washed, peeled and dried, then cut into thin half rings.
- In turn, each chicken heart should be rinsed in running water, and then cut in half (lengthwise).
- From each half of the heart, you need to cut off the top with the remains of the fat layer, as well as remove the clotted blood and other contaminants from the inner surface. After that, everything needs to be washed and dried again with paper towels.
Mushroom Chicken Hearts Recipe

Classic recipe with onions and cheese

- Heat the pan, pour 1 tbsp. l sunflower oil.
- Put the onion in a bowl and fry it until transparent.
- Add mushrooms, salt and a little pepper to the onion, and then fry the mixture until cooked.
- In a separate pan, fry chicken hearts in sunflower oil for 2–5 minutes, and then combine them with chopped carrots.
- Salt a mixture of hearts and carrots, cover the container with a lid. Extinguish food products no more than 10 minutes, over medium heat.
- Add cream, dried garlic to the hearts and simmer everything under the lid for another 15 minutes, then cool slightly.
- Lubricate the deep baking dish with sunflower oil, then lay the layers of onion and mushroom frying in layers, and then the mixture of stewed sour cream and carrot in sour cream.
- Sprinkle everything on top with grated cheese on a fine grater and place in the oven. Cook in a preheated oven at 180 ° for approximately 20 minutes. Serve such a casserole separately or with a side dish, decorating with finely chopped greens.

- Take two pans, put them on the fire and heat on each 1 tbsp. l of sunflower oil.
- Place the pre-cooked chicken hearts on one pan and the mushrooms on the other.
- Fry the mushrooms over medium heat for about 5 minutes, then add the onions to them and simmer for another 5 minutes. Cook the by-product over medium heat for about 10 minutes, then combine with curry and salt.
- Add the fried onions and cream to the hearts, mix everything thoroughly. Cover the container and simmer the food over low heat for about 5–10 minutes.
- Trail cool the dish, serve it along with gravy, sprinkled with a generous handful of chopped dill.
