Honey baklava with walnuts is a delicious oriental sweet that can be easily prepared at home. Today Azerbaijan, Baku, Armenian and many other options for cooking this dish are known, but they all have approximately the same technology. The simplest recipe is a classic one, and it will be discussed below.
Selection and preparation of ingredients
Nuts must first be peeled. It is very important to choose good honey. To check its quality, ask the seller to put a small amount in water and chop. If the liquid becomes cloudy, then the product is natural and you can safely buy it.
Important! How much it costs to prepare baklava on your own depends entirely on the list of ingredients. If you want to reduce the cost of dessert, you can add less honey to the fill, and replace part of the walnuts with peanuts.

- In a water bath, heat the milk to a temperature of approximately +35 ... + 38 ° C.
- Dissolve in it 3 tsp. sugar and yeast. Cover the container with a lid and leave for 10 minutes to make the dough come up.
- Beat 2 eggs with a whisk. Add salt and continue stirring.
- Combine beaten eggs with dough.
- Add flour to the resulting mass. Mix lightly and place 150 g of softened butter in a container. Knead the dough.
- Leave the workpiece in a container with the lid closed for about 10–20 minutes to make it fit.
- From the total mass of nuts, select 150 g of the most even and beautiful kernels to decorate an already prepared dish. Place the remaining 600 g in a pan, fry until golden brown. Pour them on a paper towel. Sift a couple of times from the husk. Grind cooled kernels with a blender.
- Mix the crumbs with 300 g of sugar.
- Divide 350 g of butter into 10 equal parts, rolling them into balls.
- Powder the countertop with flour. Put the dough on it, divide it into 10 fractions: 2 to 190 g, 8 to 125 g. Cover the blanks with a towel and leave for 10 minutes.
- Lubricate the baking dish with a pastry brush with one piece of butter.
- Roll out one of the large fractions of the dough so that a layer 40 × 45 cm in size is obtained. Distribute it evenly over the entire area of the baking sheet, so that it goes on the sides. Lubricate with butter with a brush. Place 100 g of nut crumbs on the dough.
- For the next layer, roll out a dough fraction weighing 125 g. The layer should be about 40 × 27 cm in size. Put it in a mold. Grease with butter and sprinkle 100 g of nut crumbs. Do the same with all small fractions of the dough.
- Roll out the last large piece of dough and cover with it the existing workpiece. Gently tuck the edges of the top layer with a knife into the space between the side of the mold and the first layer. Cover with cling film and leave for 20-30 minutes.
- Break the egg and separate the protein from the yolk. Beat the last and grease the surface of the dough with it.
- Divide the workpiece in the form with a knife into 4 even vertical stripes, then cut diagonally into diamonds. Place 1 nut kernel on each of them. Bake for 30–40 minutes. in the oven warmed up to + 180 ° С.
- Dissolve 300 g of sugar in water. Stir constantly, simmer for about 8 minutes. Add honey to the liquid and mix thoroughly.
- Remove the baklava from the oven, pour honey syrup on its surface. Wait for the dessert to cool completely. Cut through the existing lines again and put the resulting pieces on the dish.
Important! To give the finished dessert a piquant spice, you can sprinkle cinnamon on top of it.
