For some reason, it is generally accepted that pumpkin is exclusively an autumn ingredient. But her taste shades are so bright that this vegetable deserves to be not only a Halloween decoration and the basis for cereal and pies, but also a crown dish for New Year's dinner.
Just imagine - the chimes are beating, sparkling wine is pouring in the glasses, and the cozy smell of pumpkin is bottled and appetizingly mixed with the aroma of pine needles and roast meat. Moreover, not just pumpkins, but baked with aromatic herbs and delicate coconut oil.
You can cut pumpkins of any shape, the main thing is that the pieces are not large

For 2 servings you will need:
- 400 g pumpkin;
- 1 tbsp ground cinnamon;
- 1 tbsp brown sugar;
- a pinch of sea salt;
- 2 tbsp Coconut oil
- 1 tbsp dried rosemary;
- several sprigs of fresh rosemary for serving.
Instead of rosemary, you can also use thyme or sage
The pumpkin will need to be cut into small pieces of any shape convenient for you. Melt coconut oil in a stewpan or pan (it can be replaced with sunflower or olive, but the taste, of course, will already be different, not so interesting and gentle).

Put the pieces of pumpkin on a baking sheet. Lined with parchment, or in a baking dish, and top with oil, sprinkle with brown sugar and sea salt, as well as ground cinnamon and dry rosemary. All this must be evenly distributed over the pumpkin and gently mix.
In a preheated oven to 180 degrees, we send our pumpkin and bake it for about 20 minutes, without raising the temperature.
Sunflower seeds or nuts can become an additional decoration of baked pumpkin.
This dish can be served both in the form in which it was baked, and on portioned plates. It is noteworthy that warm slices of sweet and fragrant pumpkin are perfectly combined with both meat dishes and ice cream, or are used as an independent dish.
When serving, you can sprinkle everything with nuts or seeds or sprinkle with your favorite syrup, sauce or balsamic cream.
